ADVENTURES IN PARADISE ‘Om Swastiastu...’ For the month of June we are covering the theme Adventure! Rather than have the entire issue become one that is dedicated to just high-adrenaline sports or outdoor excursions and activities, we decided to discuss the theme in a broader sense. For example, our FOTOFOLIO this month features paintings by the students at the Daya Pelita Kasih Center, whose special needs make navigating our complicated world a constant adventure. This month’s PONDERING POINT features our contributor’s musings on how challenging it can be to be a pedestrian in certain parts of Bali. And in CAPITAL CORNER we discuss Chef Will Meyrick’s newest restaurant E&O, where he is now able to share the flavors from his culinary journeys around Asia with Jakarta’s discerning diners. Of course, we wouldn’t dare exclude outdoor sports altogether, so make sure to flip through to find out where you can take part in an exhilarating game of outdoor paintball or have a rewarding one-hour session of Stand Up Paddling Yoga. These are a couple great alternatives for those of you looking for something different to do while soaking up the hot rays of the Bali sun. The definition of adventure varies from one person to the next; some things that we define as exciting or challenging may seem like a cakewalk to others, and vice versa. We hope this issue not only motivates you to try something new but also helps to remind you how important sensitivity and common courtesy are, because every person’s journey is different and everyone faces different challenges. TRIPLE THREAT The Bulgari Resort Bali’s culinary team is in a celebratory mood after winning three prestigious culinary awards. The resort’s Chef de Cuisine of II Ristorante, Maurizio Bombini, won the 2013 Chef Wars in Bali. At Salon Culinaire 2013 in Jakarta, supervised by Executive Chef Andrew Skinner, the team won the gold medal for Asian Young Chefs. Last but not least is the gold medal from the Continental Hans Bueschkens Young Chef Challenge in Hong Kong. The team will go on to represent Asia in the world final held in Stavanger, Norway. FREQUENT FLYERS Singapore Airlines is expanding their services from Singapore to Indonesia starting on July 26. The statue itself is only a symbol of God’s will and power. To avoid any misinterpretation of Hindusim, Dang Hyang Nirartha created the concept of Padmasana, which has since become the main part of Balinese temples. Padmasana is a place where the power of God stands strong and is worshiped by Balinese Hindus. Dang Hyang Nirartha was also the one who

To make bebek betutu, you’ll need the following ingredients: • 1 whole duck (800 grams) • 4 large banana leaves to wrap around the duck • 100 ml cooking oil to be mixed with spices • 250 grams of cassava leaves, boiled, squeezed, strands seperated • 2 bay leaves • 3 kaffir lime leaves • Aluminum foil As for spices, you’ll need: Blended Spices • 6 red chillis, seeded • 2 cayenne peppers • 6 roasted candlenuts • 11 cloves of shallots • 6 cloves of garlic • 1 tablespoon coriander, roasted • 1 teaspoon pepper, roasted • 3 cm kencur (similar to a white ginger) • 2 cm galangal • 3 cm turmeric • 1 teaspoon of shrimp paste, fried • 2 teaspoons of salt Finely Sliced/Chopped Spices • 11 cloves of shallot • 6 cloves garlic • 2 cm ginger • 5 stalks lemongrass, take the base 10 cm

Bebek betutu tastes delicious paired with hot nasi sela, which is rice cooked with little pieces of sweet potato or cassava. You can also add sambal matah, made from lemon grass stalk, shallot and red chilli all finely

How to Prepare: • Mix the spices with oil, stirring until blended. Spread half the seasoning over the outside and cavity of the duck evenly. • Mix the remaining spices with cassava leaves that have been boiled together with the chopped spices, bay leaves, and kaffir lime leaves. Then insert inside the duck. Wrap the duck in banana leaf, fasten with string, then wrap with aluminum foil tightly. • Steam the duck for about 2 hours until cooked and the flavors mingle. • Open the aluminum wrap, then grill the duck with the banana leaves still wrapped around it for 20 minutes until it’s fragrant. • Tear open the banana leaves and cut the duck into 4 pieces. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
