INNOVATING & EVOLVING ‘Om Swastiastu...’

In this issue we are highlighting the innovative people and products that have caught our attention recently! We start with a feature on the company Indosole, which produces stylish footwear by incorporating old car and motorbike tires into their design. Please check them out – by supporting them you will be doing your small part to help eliminate waste on our precious island! We also have an interview with Australian celebrity pastry chef Adriano Zumbo, who visited Bali last March. He shares with us the stories behind the

unique names of his pastries (case in point, the ‘Dirty Danny’), and how thinking outside the box has gotten him to where he is today. Flip to LITTLE LOVES for a compilation of our favorite new products that we’ve discovered lately, from jeans that wick away sweat in the heat (perfect for tropical Bali) to rockers made from plastic garden chairs that boast a level of comfort like no other. Towards the end of this edition you can also find our CAPITAL CORNER article about two creative men in Jakarta making huge strides in the Indonesian molecular gastronomy scene. We hope that you, our readers, continue to evolve and reinvent yourselves too. Not only does it keep life interesting, but you might just be a moment away from that groundbreaking idea that will change people’s lives forever!

TOUCH OF BALI We challenged the students of Fashion Management & Fashion Design at the BINUS NORTHUMBRIA SCHOOL OF DESIGN (Binus International Jakarta) to create fashion illustrations by making use of both hand sketching and Adobe Photoshop. The catch? They must incorporate hints of Bali into the image – it doesn’t have to be obvious, but it does need to be there. We spotted the Balinese poleng pattern, a barong head, the Tegalalang rice fields and the remains of the Taman Ujung Palace, among others. where he felt they “weren’t going to make it,” he decided to take over his father’s catering business. In 2007, he started his own Indonesian restaurant called Suguhan Magali. One day, Andrian typed “the best restaurant in the world” into the Google search engine and found El Bulli on the top of the list. His curiousity led him to buy a molecular gastronomy book from Amazon. He found the content to be quite complicated, but what was most discouraging was the fact that the tools and equipment were not yet available in Indonesia. The first thing he was able to procure (again, from Amazon) was a sous vide, or a water oven, which

said. The new Namaaz can be considered a fine dining restaurant, but you won’t find any excessive decorations. “To be honest, I see that the fine dining competition in Indonesia is not about the food but more about the interior design, perhaps to provide customers with a certain atmosphere,” he explained. “But I don’t have to follow them. Of course the place has got to be nice, but I don’t want my food to hide behind the beauty of the interior design.” Another thing about Namaaz is that you won’t find fancy ingredients such as foie gras, caviar, truffles, etc. “Fine dining restaurants feel obliged to serve those ingredients to add value. Me, I add the value by creativity. What we offer is a unique dining experience,” Andrian concluded.

creativity – molecular gastronomy. Previously known as an Indonesian coffee artist, Ronald’s introduction to molecular gastronomy was basically due to his “big mouth.” During the Indonesia Barista Competition 2011, he had a conversation with Toni Wahid (of cikopi.com), who commented on how boring he found baristas’ signature drinks to be. “Give me a month and I’ll come up with something different,” Ronald responded. At the time he had been experimenting with transformation, so he dug deeper and found molecular gastronomy. Ronald’s case is a proof that sometimes a big mouth can be beneficial. In fact, he is the first person in the world to apply molecular gastronomy to coffee. Among his creations are the Espresso Raviolli (jelly espresso made of alginate and calcic) and the drinker’s mouth to spout smoke.

“BECAUSE IT IS AN ART, I DON’T WANT TO PATENT MY CREATIONS. I’M NOT AFRAID OF BEING IMITATED. WHEN YOU IMITATE ME, I’LL ALREADY BE DOING SOMETHING ELSE.”

By the end of 2013 Ronald had opened his own place in Grand Indonesia called Ron’s Laboratory, a molecular gastronomy gelato shop. “Most ice cream bars don’t create unique flavors because the minimum capacity of their ice cream machine is 5 kg or 10 kg – too risky for business,” he explained. “With liquid nitrogen I can make very small quantities, made to order. I can experiment more with flavors.” The o

liquid nitrogen (over -190 C) acts as a freezing agent and evaporates into the air within seconds. Within months, the word of Ron’s Laboratory’s success spread through the Internet and social media outlets. However, Ronald sees it as a revenge project. “When I was a little kid, people told me not to play with food. It’s payback time!” he exclaimed triumphantly. “In the end, you’re called two names for being different – unique if you succeed, or weird if you fail.” Andrian and Ronald agree that molecular gastronomy can be applied to any kind of food to create something previously unimaginable. For us customers, it means that good things are on the way. „ By Edwin Pangestu

Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
