HIDDEN IN PLAIN SIGHT ‘Om Swastiastu...’

The busiest time of the year for Bali has passed, but that does not mean the flow of tourists to the island has ceased. For our readers who have just arrived to our little tropical paradise, welcome! The traffic on the roads is a bit less packed compared to the few months that came before, so we decided share with you some off-the-beatentrack options in case anyone is interested in a little road trip!

COVER COURTESY OF WAKASAILING

In CRAFT & CULTURE we head to East Bali to visit the Bali Aga in Tenganan Dauh Tukad. By merely leaving a donation in the amount of your choice, you can learn all about this intriguing village and its centuries-old traditions. If you need accommodation while you’re in the area, turn to REST & RELAX to read about The Nirwana in Candidasa and its charming and quaint sea-facing villas. Aside from those two gems in East Bali, we also wanted to share a few more gems that for some might have been hidden in plain sight. Urchin restaurant, in front of Seminyak’s The Colony hotel for example, is a newcomer that has is definitely worth trying (especially for its Raw Bar). And have you ever tried the sport of flyboarding? If not, turn to ACTION & ATTRACTION to learn all about it! All this and more in this edition of BALI & BEYOND. Hope we’re able to provide some inspiration for you – have a great September!

DANCES OF BALI AGA The calendar is full of temple ceremonies and festivals, with events appearing every month that involve unique arts. Classical dances like the Abuang dance for young boys, the sacred Rejang dance and the solo Baris dance are performed with elaborate ceremonial dress and headgear unseen in other parts of Bali. Their dances embrace a proud history. A crowd favorite is the Baris dance, which is performed by men. The dancers split into opposing armies carrying sacred artifacts and symbolic weapons for magical strength. The century-old unique versions of these dances can only be witnessed in the Bali Aga villages of East Bali.

USABA SAMBAH FESTIVAL Ritual battles take place in a number of old Bali villages in Karangasem, accompanied by the pounding rhythms of the ancient gamelan. Hermes had actually found its way to Indonesia years ago! Not the bags , but the god of merchants that was hoped would protect the trade route to Indonesia back then. You can find these in Jakarta’s Old City.

There’s a tiny chocolate factory in Candidasa (East Bali) owned by a man named Charlie – no joke! It’s slightly hidden so you’ll have to ask around to find it, but when you get there make sure you look for this dream swing!

The Courtyard by Marriott Bali Seminyak recently opened on Jalan Dhyana Pura. We popped in to take a look and couldn’t help but ask to snap a photo of the pool team in their cute uniforms. Obviously, they happily obliged!

PHOTOS IN JAKARTA AND AT ANANTARA ULUWATU BY JOSEPH WANG BLOSSOM BLISS PHOTOS COURTESY, ALL OTHERS BY MUTIA ADISOMA

SIGHTS&SOUNDS

Our cork board of photos, quotes and fun facts that we picked up while exploring in July and August...

If you’re in the Uluwatu area at dinnertime, you should try SONO Teppanyaki at the Anantara Bali Uluwatu Resort & Spa. The boisterous and cheeky chefs had us chuckling throughout the entire meal, and we were absolutely stuffed by the end. We especially recommend this if you have kids in tow.

LIGHT BITES We caught up with restaurateur Chef Luke Mangan of Salt tapas & bar during one of his recent visits to Bali. Bali & Beyond (BB): You’ve got numerous Salt restaurants around the world, including the one in Jakarta. What makes Salt tapas & bar in Seminyak unique? Luke Mangan (LM): I love Bali, and I’ve always liked this location [at Peppers Sentosa Seminyak]. It’s sort of off the beaten track and I think when people walk in, they go ‘Wow.’ You’ve got the pool… it’s very sort of Miami/L.A. And our food is quite different to anything else in Bali. There’s no point in doing a restaurant where all your competitors are doing the same. BB: So that’s why you chose to do little bites and tapas instead of something like what you have in Jakarta? LM: We thought about doing a Salt grill here, but there are so many restaurants with a grill concept and I just thought we needed something different. BB: What are your personal favorites on the Salt tapas menu? LM: Well, the sashimi with ginger dressing is a signature, the licorice parfait for dessert… We do great pork sliders. Those things are some of my favorites. There’s also a beautiful halloumi salad with chickpeas; there’s a nice fish tagine. It’s all about sharing. BB: Would you recommend Salt tapas for families? LM: Yeah! The family program on Sundays is building and I’m going to do it on Saturdays as well. BB: How would you describe Bali? LM: Relaxing, peaceful, calming… when you’re not in traffic! Great food, beaches… I really enjoy it. I kind of switch off when I come here, which is nice. And I think that shows in the restaurant, too. I want it to be relaxed and casual. We’re not fine dining.

Blossom BLISS in Ubud has products that we think make really thoughtful gifts! These ‘intention candles’ (100% vegetable wax) can be lit in honor of whatever you are manifesting in your life. 90% of the products in this cute shop are made in Bali – check it out the next time you’re on Monkey Forest Road!

Here’s a fun fact – you can use the pool at Peppers Sentosa for free! So grab your swimsuit, round up your pals and enjoy a dip. When your stomach starts to grumble, you’ll know exactly what to do next.

Food & Wine Philosophy’s Pairing By Tirtha Dining Director Having spent 14 years as sommelier all over the world, Karim Benramdane has a different method than the classic ‘scientific’ approach. Asking for guest preference would always be his main philosophy to start with. Some like it fruity, dry, light or heavy. From there the surprise effect would be by presenting type of wine that the customer wouldn’t normally choose. Each time, the reaction would be the

same, they are surprised to discover know how much they enjoyed the wine and the pairing. Pairing wine with food in Tirtha has always been a pleasurable challenge for Karim. The Chef is an artistic person that always exploring different technique and recipe that presents unexpected, unique final taste. It definitely adds to the pleasurable surprise effect for Tirtha customers. Karim principal is simple, which is to avoid combination that overpowering the other, be it food or wine that taste too sour or too flat. There’s no science in that. BALI&BEYOND SEPTEMBER 2014

69

The truth is, he adds, other than the suggested basic principal above; there are no good or bad way of matching food & wine. It is really depending on the moment and what each person really like. It is all about the combination that works for every character. However, often when people’s have their preferred taste, they generally choose to stick with it, which is a pity since wine makers all over the world constantly reinvented their wine making process into so many wonderful taste and flavors to tantalize our taste buds. Karim’s suggestion would be for wine lovers to keep an open mind, let the palate taste as much as possible, try everything and who knows, one might just discover a new love. As said by Mr. Benramdane, the hardest think to pair is not the food or the wine, but the people’s mind. Tirtha Dining Jl. Uluwatu Br. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For “Bali Belly”, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace fluids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
