THE FOLLOWING GUIDELINES SHOULD BE OBSERVED:

Always be clean, tidy and diplomatic Hands are constantly shown, so pay special attention to fingernails. Smoking and drinking behind the bar is not allowed and, in some countries, its illegal . Keep glasses and equipment clean and polished. Handle glasses by stem or base and never put your finger inside the glass or near the RIM. Always use good quality products. All kinds of sugar, which must be dry, are required in cocktail bars.

In a mixed order of drinks, always make the cocktails last so that they can be served fresh. 8. A cocktail is a mixture and will separate if left too long. 9. All bottles in the bar should be placed back to their appropriate place after the usage. 10. When serving drinks on the floor, always use a round tray with clean ashtrays and a cloth to clean the table. 11. Dirty ashtrays must be changed constantly. 12.. All types of fruits must be washed before using them for garnish.

BARCAREER EQUIPMENT & UTENSILS SUPPORT There are two types of cocktail shakers the Boston and the Standard. The Boston Shaker: This consists of two cones which overlap. It is very popular as it can be used quickly and then strained with a Hawthorn. The Standard Shaker: The shaker has a strainer incorporated and is usually made of stainless steel or plated silver. The Mixing Glass: This is a very large glass and is used for mixing clear drinks. The Strainer: It is used with the cocktail shaker and mixing glass to hold back the ice. Bar Spoon: This is a long-handled spoon with a muddler at the end. Drink Mixer: This machine is the mechanical substitute for the hand shaker.

GENERAL INFORMATION & TERMINOLOGY

KEY TERMS 1. BLEND - Put ingredients in an electric blender and blend until required consistency is achieved. 2. BUILD - Without pre-mixing, pour the ingredients directly into the suitable glass. 3. MIX - Put ingredients together with crushed ice into the cone of electric drink mixer. 4. SHAKE - Put ingredients together with cubed ice into a standard shaker or a Boston shaker. 5. STIR - Put ingredients and ice in mixing glass and stir using a bar spoon.

HOW TO MAKE A COCKTAIL 1. Prepare your Mise-en-Place a. Place all Alcoholic Beverages on the rubber mat b. Shaker / Mixing glass etc. c. Any other ingredients needed

2. Chill the Glass if Applicable for the type of drink being made. (Chill with crushed ice) 3. Place 2 scoops of ice in the shaker (if applicable) 4. Add Ingredients (For Alcohol 1CL is 1 second of pouring) or use a jigger. 5. When finished pouring, place the bottles back to its appropriate place. 6. Shake 7. Pour 8. WASH SHAKER! 9. IRISH COFFEE

DIGESTIVE GLASS : Irish coffee glass EQUIPMENT : Bar spoon

INGREDIENTS

HOW TO MAKE IT

• Jameson Irish cofee

Pour 3 tea spoons of sugar

Add 3cl of Irish Whisky

Warm up mixture using coffee machine or steamer.

4.

Using the lighter flambé the mixture and keep stirring

• Brown Sugar • 1 cup of coffee • Whipped fresh cream

Add the coffee till the top leaving a little space.

Using the back of the bar spoon, gently add the cream.
